A guided wine tasting flight of six Bluegrass wines featuring side by side tasting of the new release vs the aged release.

Three brackets. Three dishes. Each bracket pairs a current release with its cellar-aged counterpart, matched to a dish designed by Chef Chiero to bring out the best in both wines.

Course One
2023 Bluegrass Shiraz + 2017 Bluegrass Shiraz
Slow cooked beef cheek with creamy mash potato, tuscan kale and red wine sauce.

Course Two

2023 Bluegrass Cabernet Shiraz + 2016 Bluegrass Cabernet Shiraz
Handmade fresh pasta and chocolate pasta tortello with slow cooked venison shoulder ragu, sautéed mushrooms and tonka bean.

Course Three

2023 Bluegrass Cabernet Sauvignon + 2017 Bluegrass Cabernet Sauvignon
Slow cooked herb and garlic lamb saddle with jerusalem artichoke purée, glazed baby dutch carrots and winter truffle red wine jus.
