Coast to Coals is the premier event in the Deliciously Wild guest chef series. This unique collaboration brings together guest chef Nicholas Finn and native food expert Jackie Mazzocato to showcase the incredible synergy between the ocean and the Australian bush.

Nicholas Finn, Head of Product Development and Innovation at Yumbah Aquaculture, has honed his skills in world-class kitchens across Adelaide, Melbourne, Madrid, and California. He will guide you through an exclusive, behind-the-scenes demonstration, breaking down a whole kingfish and sharing professional secrets on cuts and flavour profiles.

Jackie Mazzocato, the award-winning recipe writer behind Fleurieu Food and Wine (Gold for Excellence in Food Tourism, 2025 South Australian Tourism Awards), will introduce you to the vibrant world of native Australian ingredients. Celebrate the launch of her new cookbook, Deliciously Wild, as you cook with Davidson plum, desert lime, finger lime, and lemon myrtle.

Your experience begins on the deck with a premium glass of wine in hand, overlooking the stunning sweep of the vineyards. 🍷

  • The Raw Course: Work alongside Chef Nick to prepare a delicate kingfish crudo. Pair your creation with pickled pigface, ribbon cucumber, finger lime, and a tangy Davidson plum dressing, enjoyed immediately with a perfectly matched McLaren Vale white from Hastwell and Lightfoot.
  • The Hibachi Grill: Take to the live coals to grill your own kingfish top loin. Finish your dish with a melting desert lime and lemon myrtle compound butter, served alongside a fresh baby leaf salad, charred broccolini with whipped feta, and a glass of Grenache Tempranillo. 🔥

Your date and start time are shown in your booking confirmation. Please arrive 10 minutes early so we can start on time.

You will prepare South Australian kingfish two ways with guest chef Nicholas Finn of Yumbah Aquaculture: a crudo at the bench, then top loin over the hibachi coals, with matched Hastwell & Lightfoot wines. We supply all the ingredients, equipment, and aprons.
