What Is the Ultimate Innovation Challenge?
The Ultimate Innovation Challenge is a corporate culinary experience where teams design and launch a food business concept within one day. Participants are required to:
- Identify a target market
- Define a customer problem
- Create a clear value proposition
- Build a pricing and margin model
- Manage a fixed working budget
- Execute a physical product
- Deliver a structured elevator pitch
- Every decision is scored against clear commercial and operational criterion.
The experience combines creativity with discipline, innovation with logic and leadership with execution.
On The Day
- Arrival, coffee and private meeting. Participants begin the day by settling in, connecting with colleagues, and aligning as a group. This helps build rapport, encourages open communication, and creates a strong foundation for teamwork.
- Executive Brief and Challenge Launch. At the official start, teams are introduced to the challenge, scoring criteria, and commercial expectations. At this stage, participants develop strategic thinking by understanding the business objective and the constraints they must work within. They also begin collaborating by discussing how they want to approach the challenge.
- Business Concept and Strategy Session. Teams work together to create their business idea, such as a retail product, food truck concept, packaged line, or meal-on-wheels solution. Here, participants learn customer analysis, competitor thinking, creativity, and value proposition design. They share ideas, debate options, and collaborate to choose one direction as a team.
- Working Lunch. Lunch is served while teams continue their discussions. This is a valuable moment for informal collaboration, where participants refine their concept, align on priorities, and strengthen communication in a more relaxed setting.
- Financial Modelling and Procurement. Teams move into the commercial side of the challenge by calculating costs, setting a selling price, estimating gross margin, and working out break-even. This develops financial literacy, commercial awareness, and practical decision-making. Team members collaborate closely to balance creativity with business viability, while one person takes responsibility for ingredient purchasing.
- Culinary Execution. This is where strategy turns into action. Participants assign roles, manage time, coordinate tasks, and execute their product under pressure. They strengthen leadership, operational planning, adaptability, and problem-solving. This stage requires strong collaboration, because success depends on each team member contributing effectively and supporting one another.
- Final Presentations and Judging. Teams present their concept in an investor-style pitch supported by an A3 business dashboard. Participants build presentation skills, confidence, and the ability to explain and defend decisions. They work together to tell a clear story about their idea, financial logic, and execution.
- Awards and Celebration. The celebration recognises team effort and achievement. It reinforces morale, encourages reflection, and gives participants a shared sense of accomplishment.
- Program Concludes. By the end of the day, participants leave with stronger strategic thinking, better communication, deeper collaboration, and greater confidence in turning ideas into action.

Booking Terms
- For the event listed above, a minimum of 10 participants or a minimum spend of $4,950 is required.
- Full payment is needed at the time of booking to secure your session, provided the booking is made within 14 days of the event date. Payment can be made via credit/debit card, bank transfer, or cash.
- For groups larger than 12 or 10 guests respectively, the date can be secured with a 50% deposit. The remaining balance is due three (3) weeks before the event, along with final guest numbers and dietary requirements.
- Cancellations made more than 14 days before the event are eligible for a 50% refund of the deposit. For cancellations within 14 days, no refund will be issued and the minimum spend will still apply. No refund will be given for no-shows or early departures on the day.
- Final numbers and dietary requirements must be confirmed at least 14 days before your session. This allows us to pre-order ingredients and allocate staff accordingly.

He has a wonderful calm style, is always willing to answer any Q’s from the group and is incredibly knowledgeable. I love the combination of his knowledge sharing, demo cooking and helping us with our own preparation. I also love his ‘inside knowledge’ and tips on best places to find authentic ingredients. We made sushi, miso soup, okonomiyaki, and soba with tempura. Each dish was hands-on, and I loved that Dylan taught tips and techniques you wouldn’t normally get from a recipe. My favourite part was learning how to roll sushi properly — it was surprisingly beginner-friendly with his guidance.
The class also included free drinks, and I really enjoyed the wine.
Overall, it was a great experience and I’d definitely recommend Chef Dylan’s class to anyone wanting to learn Japanese cooking in a fun, relaxed, and welcoming environment.
Dillian was a great teacher who was engaging and didnt overwhelmed the class with too many directions at one time.
Even when our ramen noodle dough went a bit south he swooped in to help us out and encouraged us until we saved it.

The only constructive feedback / improvements worth to look at is that every student should have their own dedicated board when hand made their own pasta or pasties. At the moment all these are done on the cooking/dining table and we see it with possible hygiene issues. Hope to see this new change in our next classes, thanks

Had a great night learning to cook Japanese meals, the set up was fantastic and the class ran amazingly well, a lovely way to spend a friday night.
Anan was a great teacher and fun person to learn to cook from!

I could not fault it.
No one in our group had ever prepared dumplings the only experience we had was eating them in restaurants.
The chef was so thorough in his explanations, patient answering questions and helping novices correct technique.
We enjoyed the process and we were rewarded with a delicious lunch, washed down with our choice of wine or soft drink. Plus we were provide with containers to take home the remainder of the dumplings.

The facilities were clean and well set out. We had all the equipment needed to carry out the preparation and cooking of the meals. The drinks provided certainly helped to create a very relaxed and inclusive atmosphere. And, to finish things off, we were able to enjoy a very tasty dinner.
I can not recommend this experience highly enough. We would be more than happy to partake in another one of these courses.

I felt it was rushed and because I was paired up with someone that they did the majority of the cooking.
For what I was looking for, I felt like the $200 price was not worth it.
This review is in no way a reflection of the chef that demonstrated the class, but only my experience.
Throughout it all Dylan attentively makes sure we are all across the assembly and cooking steps. I thoroughly recommend this for all, from new to seasoned cooking enthusiasts!!
